Peanut Noodle Salad

R and I have been on an Asian food kick recently.

Peanut Noodle Salad

Can be served warm or cold. Intended as a side dish, but could be a main dish with vegetables or tofu added.

  • Noodles – I use a mix of rice vermicelli and whatever other long noodles I have on hand.

Approx.

  • 1/4 c soy sauce
  • 6 tbs chunky peanut butter
  • 1/3 c brown sugar
  • 1/4 c orange juice
  • 1 tbs rice wine vinegar
  • Garlic and chili powder to taste

Make the noodles, toss with sesame oil. Mix the sauce ingredients and add the still warm noodles. Adjust to taste. Toss with vegetables, sesame seeds, green onions, etc.
